Ingredients

2 medium-size avocados
10 mL (2 tsp) fresh lime or lemon juice
2 mL (1/2 tsp) salt
2 green onions, finely chopped
1 small tomato, seeded and finely chopped
1 clove garlic, minced
30 mL (2 tbsp) seeded and finely chopped fresh or canned green chili pepper
15 mL (1 tbsp) minced fresh cilantro or parsley, or to taste

Directions

  1. Halve the avocados lengthwise and scoop the flesh into a medium-size bowl. Add the lime juice and salt and mash with a fork, mixing well.
  2. Add the green onions, tomato, garlic, green chili pepper, and cilantro and blend. Serve immediately, or place a layer of plastic wrap directly on the surface to prevent browning, and refrigerate.
  3. Guacamole is best eaten the same day it is made, but it will keep, refrigerated, for 2 days. Serve with tortilla chips.
