Spicy Miso and Lemon Basil Aioli

Serve this mildly spicy and fragrant aioli underneath grilled char. With its citrus notes, the lemon basil adds freshness; the miso lends subtle saltiness and reflects the Asian influences of the West Coast.

1 garlic clove, chopped
1 small, red Thai chili, seeds and ribs removed
2 egg yolks
2 tbsp + 1 tsp (30 mL) miso paste
2 tbsp (25 mL) lemon juice
¼ cup (50 mL) olive oil
¾ cup (175 mL) grape-seed oil
2 tbsp (25 mL) sesame oil
2 tbsp (25 mL) packed lemon basil leaves, finely chopped (or basil, finely chopped + 1 tsp grated lemon zest)
Finely ground sea salt, to taste


In a blender, combine garlic, chili, egg yolks, miso and lemon juice until creamy and thick. Combine all oils and slowly drizzle into running blender and process until combined well. Stir in fresh lemon basil. Season with sea salt, to taste.
