Ingredients

15 ml (1 tbsp) olive oil
3 grey shallots, chopped
4 dried figs, diced
375 ml (1 1/2 cups) red wine
2 bay leaves
2 ml (1/2 tsp dried thyme
250 ml (1 cup) chicken stock
4 fresh figs, quartered
Salt and freshly ground pepper, to taste

Directions

  1. In a saucepan, brown the shallots and dried figs in the oil
  2. Add the wine, bay leaves, thyme and stock. Bring to a boil and reduce by half over low heat.
  3. Add the fresh figs, cook 5 minutes, season to taste with salt and pepper, and serve.
