Ingredients

14 unpeeled cloves garlic
5 slices firm-textured white bread, preferably stale
375 mL (1-1/2 cups) mashed potatoes
125 mL (1/2 cup) shelled walnuts
50 mL (1/4 cup) fresh lemon juice
3 mL (3/4 tsp) salt
3 mL (3/4 tsp) black pepper
150 mL (2/3 cup) olive oil
  Optional garnishes: parsley sprigs, lemon zest

Directions

Preheat the oven to 180°C (350°F). Bundle garlic in aluminum foil. Place in a small baking dish with 1 cm (1/2 inch) water and bake until garlic is tender — about 45 minutes. Meanwhile, place bread in a large, shallow baking dish, cover with water, and soak 5 to 10 minutes.

Squeeze bread dry and place in a food processor. When garlic is cool enough to handle, squeeze to extract flesh, then place in the food processor. Add potatoes, walnuts, lemon juice, salt, and pepper, and pulse just enough to combine.

With the motor running, drizzle in olive oil and continue processing until smooth. Spoon into a serving bowl and garnish as desired. Serve with mini pita rounds, split in half and toasted, or with assorted crudités or chips.

Makes about 3 cups.
