45 ml (3 tbsp) freshly squeezed lemon juice
45 ml (3 tbsp) olive oil
10 ml (2 tsp) rosemary, minced
Salt and freshly ground pepper, to taste
1 kg (2 lb) boneless turkey breast, in 3 cm (1.5 inch) cubes
200 g (7 oz) mozzarella cheese, sliced
4 panini, halved lengthwise
250 ml (1 cup) arugula, rinsed and spun dry

Directions

  1. Place the first 5 ingredients in a large sealable plastic bag and close tightly. Refrigerate 1 hour.
  2. Preheat the grill.
  3. Arrange the turkey cubes on skewers. Sear each side then continue cooking about 15 minutes until done.
  4. Toast the panini on both sides on the grill. Fill with cheese and turkey to make 4 sandwiches.
  5. Place sandwiches on the grill to melt the cheese.
  6. Serve with arugula.

Tip: Bamboo skewers are light and inexpensive, but they burn easily and sometimes they break. It helps to soak them in water before using them. Drop some in an empty plastic bottle, fill the bottle to the top with water, put the cap on and let sit at least 2 hours.
