1 lemon, zest and juice
10 ml (2 tsp) liquid honey
45 ml (3 tbsp) extra-virgin olive oil
Salt and freshly ground pepper, to taste
500 ml (2 cups) mixed tender greens (mesclun)
8 slices Italian sandwich bread, crusts removed
170 g feta cheese, in 0.5 cm (1/4 inch slices)
1 egg, beaten
30 ml (2 tbsp) olive oil
- Blanch the lemon zest for 2 minutes. Drain, rinse and pat dry.
- In a bowl, combine the blanched zest, lemon juice, honey and olive oil. Season with salt and pepper. Add the greens and toss. Set aside.
- Dip the cheese slices in the beaten egg. Heat the oil in a large frying pan and brown the slices on both sides.
- Divide the salad over 4 slices of bread. Place the warm cheese on top, cover with remaining slices of bread. Cut each sandwich diagonally in two and serve.
