Tramezzini with Warm Feta Cheese

1 lemon, zest and juice
10 ml (2 tsp) liquid honey
45 ml (3 tbsp) extra-virgin olive oil
Salt and freshly ground pepper, to taste
500 ml (2 cups) mixed tender greens (mesclun)
8 slices Italian sandwich bread, crusts removed
170 g feta cheese, in 0.5 cm (1/4 inch slices)
1 egg, beaten
30 ml (2 tbsp) olive oil

Directions

  1. Blanch the lemon zest for 2 minutes. Drain, rinse and pat dry.
  2. In a bowl, combine the blanched zest, lemon juice, honey and olive oil. Season with salt and pepper. Add the greens and toss. Set aside.
  3. Dip the cheese slices in the beaten egg. Heat the oil in a large frying pan and brown the slices on both sides.
  4. Divide the salad over 4 slices of bread. Place the warm cheese on top, cover with remaining slices of bread. Cut each sandwich diagonally in two and serve.
