8 slices italian sandwich bread
12 slices havarti cheese with jalapeno pepper
225 g / 1/2 lb mushrooms, thinly sliced
3 green onions, thinly sliced
To taste ground cayenne pepper
60 ml / 4 tbsp olive oil
Place 4 slices of bread on a work surface. Cover each with 3 slices of cheese and an equal amount of mushrooms and green onions. Season with cayenne pepper.
Top with the remaining slices of bread to make sandwiches.
Warm a large non-stick pan over medium heat. Add half the oil.
Brown the sandwiches on each side in the pan. Cover with a sheet of aluminum foil, place a weight on top and cook another 3 minutes. Turn, add remaining oil and cook other side as above.
Cut each sandwich in four before serving.
