Ingredients

Coffee Granita
625 ml / 2 1/2 cups    espresso coffee
To taste    lemon zest, grated finely
125 ml / 1/2 cup    sugar

Pineapple Granita
500 ml / 2 cups    water
250 ml / 1 cup    sugar
1    ripe pineapple, peeled, cored and cut into chunks
1    lime, juice freshly squeezed

Directions

Coffee Granita

In a bowl, combine the coffee, lemon zest and sugar.

Pour into a shallow dish and place in the freezer for one hour or until it begins to freeze around the edges.

Scrape the ice with a fork to ice flakes, mixing from the edges into the centre. Return to the freezer for 20 minutes.

Repeat the freezing and scraping process until the entire mixture has turned into small ice flakes.

Serve in individual dessert dishes.

Pineapple Granita

In a saucepan, bring the water and sugar to a boil and stir until the sugar is completely dissolved.

In a blender, purée the pineapple with the lime juice and the sugar syrup.

Pour into a shallow dish and proceed as for the coffee ice.

Serve in individual dessert dishes.
