1 lb (500 g) ripe strawberries, hulled
Grated zest and juice of 1 large orange
2/3 cup (160 mL) plain low-fat yogurt
1 tbsp (15 mL) sugar, or to taste (optional)
To Garnish:
4 small strawberries
4 small orange slices

Directions

Tip the strawberries into a food processor or blender and add the orange zest, orange juice, and yogurt. Blend to a purée, scraping down the sides of the container once or twice. Taste the mixture and sweeten with the sugar, if necessary. For a really smooth consistency, press through a nylon sieve to remove the strawberry pips, although this is not essential. Pour into glasses. If you like, decorate with small strawberries and slices of orange, both split so they sit on the rim of the glass.

Some More Ideas: Add a sliced banana to the strawberries. This will thicken the texture of the smoothie and will also add natural sweetness, so be sure to taste before adding sugar—you may not need any. Swap the strawberries for dried apricots, to make a smoothie with a useful amount of beta-carotene and a good amount of soluble fibre. Grey tea until tender, about 30 minutes. Cool, then pour the apricots and liquid into a blender. Add the orange zest, juice, and yogurt and blend until smooth. Taste and sweeten with sugar, if required.
