Spicy Vegetable Cocktail
Not a fan of the crunch of carrots, or the tartness of tomatoes? Whip up this veggie cocktail and enjoy your veggies.

3 cups tomato juice
¼ cup coarsely chopped, seeded green bell pepper
1 scallion, trimmed to 5 inches, thinly sliced
1 tablespoon coarsely chopped parsley
1 tablespoon horseradish
1 teaspoon Worcestershire sauce
½ teaspoon sugar
½ teaspoon hot red pepper sauce, or to taste
Celery stalks and lemon slices, for garnish (optional)
- In blender, whirl tomato juice, green pepper, scallion, parsley, horseradish, Worcestershire, sugar, and hot pepper sauce until smooth, 2 to 3 minutes.
- Serve over ice. Garnish with celery and lemon, if desired.
Helpful Hint: If you don’t have a blender or food processor, you can still whip up smoothies with a wire whisk in a deep bowl.
