Spicy Vegetable Cocktail

Not a fan of the crunch of carrots, or the tartness of tomatoes? Whip up this veggie cocktail and enjoy your veggies.

Ingredients

3 cups tomato juice
¼ cup coarsely chopped, seeded green bell pepper
1 scallion, trimmed to 5 inches, thinly sliced
1 tablespoon coarsely chopped parsley
1 tablespoon horseradish
1 teaspoon Worcestershire sauce
½ teaspoon sugar
½ teaspoon hot red pepper sauce, or to taste
Celery stalks and lemon slices, for garnish (optional)

Directions

  1. In blender, whirl tomato juice, green pepper, scallion, parsley, horseradish, Worcestershire, sugar, and hot pepper sauce until smooth, 2 to 3 minutes.
  2. Serve over ice. Garnish with celery and lemon, if desired.

Helpful Hint: If you don’t have a blender or food processor, you can still whip up smoothies with a wire whisk in a deep bowl.
