8 thick slices mozzarella cheese
16 slices toasted bread
To taste salt and freshly ground pepper
Toppings of your choice:
To taste tomato slices
To taste assorted peppers, in thin strips
To taste sliced mushrooms
In a non-stick skillet, plate 2 slices of cheese at a time. Cook over medium heat for a few minutes until the cheese begins to melt and is lightly browned.
Slide a slice of cheese directly onto a slice of toast.
Season, add your favourite toppings and cover with another piece of toast. Repeat until all ingredients are used up.
Cut sandwiches in quarters and serve hot.
