Ingredients

2                red peppers, sliced thinly
2                green zucchini, sliced thinly
1                eggplant, sliced thinly
2                portobello mushrooms, sliced thinly
1                red onion, sliced thinly
150 ml / 2/3 cup        Italian dressing
130 g / 3 cups            grated old Cheddar
1                 baguette, cut in half lengthwise

Directions

Preheat the broiler.

In a bowl, toss all the vegetables with the dressing.

Transfer the vegetables to a baking sheet and broil until done, turning once.

Arrange the vegetables on one half of the baguette, sprinkle with cheese and place the sandwich (still open) back in the oven to melt the cheese and toast the other half of the bread.

Close the sandwich, cut in 4 or 6 sections and serve.

Suggested side dish: Nougat for dessert
