2 cooked beets (4 1/2 ounces), cooled and coarsely chopped
2 ounces fresh or frozen raspberries
1 cup cranberry juice, chilled
1 cup low-fat plain yogurt
Whole raspberries for garnish (optional)
- In food processor or blender, puree beets, raspberries, and cranberry juice until smooth.
- Pour puree through a strainer into a large pitcher. Whisk in most of the yogurt.
- Pour into 4 glasses and top with remaining yogurt. Garnish with extra raspberries, if you like. Serve immediately.
