Ultimate Moose Burger

With one moose for every four people on the Rock, it’s no surprise this gamey meat is common fare. Chef Katie Hayes, who just opened Bonavista Social Club, on the Bonavista Peninsula, Newfoundland, offers diners the Ultimate Moose Burger: a patty served in an artisanal bun on a bed of spinach with sautéed wild mushrooms, bacon and a tart partridgeberry ketchup. At home, you could substitute any tomato-based ketchup for delicious results.

1. In large bowl, combine onion, garlic, egg, bacon fat and savoury; add moose meat, mixing just until combined. Form into 4 patties, each ¾ inch (2 cm) thick; transfer to tray, cover and refrigerate for 1 hour. 2. Heat large cast iron skillet over medium-high heat; add oil. Sear patties, turning once, until digital thermometer inserted into centre reads 160°F (71°C), about 10 minutes. Top each with cheese and broil or cover until melted, about 1 minute.


  • ½ cup (125 mL) cooked and cooled finely chopped caramelized onion
  • 1 clove garlic, minced
  • ½ egg, beaten
  • 4 tsp (20 mL) melted bacon fat (from cooked bacon strips)
  • ½ tsp (2 mL) fresh savoury
  • 1 lb (500 g) ground moose meat
  • 4 slices aged cheddar
