Apple Cider Pork Chops

- 2 tbsp olive oil
- 6 boneless pork loin chops about 3/4 inch thick, 6 to 8 ounces each
- 1 garlic clove minced
- 1 tbsp dijon mustard
- 1 tsp honey
- 1/2 tsp apple pie spice
- 1/2 tsp coarsely ground pepper
- 1/4 tsp dried thyme
- 1/4 tsp salt
- 1 cup apple cider
- 1 tbsp plus 1 teaspoon cornstarch
- 2 tbsp water
- minced fresh parsley
