  Filling:

3 packages (250 g (8 oz) each) cream cheese
250 mL (1 cup) sugar
3 eggs
250 mL (1 cup) sour cream
  Crumb Crust:

300 mL (1-1/4 cups) graham cracker crumbs
75 mL (5 tbsp) butter or margarine, melted
50 mL (1/4 cup) sugar
  Glaze:

50 mL (1/4 cup) strawberry jelly
15 mL (1 tbsp) water
500 mL (1 pint) strawberries, hulled and thinly sliced

Directions

For the Filling:
Preheat the oven to 160°C (325°F). In a food processor, pulse cream cheese and sugar until smooth. With the motor running, add eggs one at a time. Scrape down work bowl sides, add sour cream, and pulse until smooth.

For the Crust:
In a medium-size bowl, toss crumbs, butter, and sugar with a fork until well mixed. Press mixture firmly over the bottom of a 22.5 cm (9 in) springform pan.

Pour filling into crumb crust and bake until filling shimmies only slightly in the centre — about 50 minutes. Transfer to a rack and cool in pan to room temperature.

For the Glaze:
In a small saucepan over moderately high heat, bring jelly and water to a boil. Remove from the heat and cool slightly. Brush cheesecake with about 1/3 of the glaze, arrange sliced strawberries decoratively on top, and brush with remaining glaze.

Makes 6 servings.
