2 medium ripe but firm California Bartlett pears, peeled, cored and cut into small chunks
1/2 large ripe mango, peeled, seeded and cut into small chunks
1/3 cup (75 mL) finely chopped yellow bell pepper
1/3 cup (75 mL) finely chopped red bell pepper
1/4 cup (50 mL) finely chopped red onion
1 small jalapeño pepper, seeded and finely minced
3 tbsp (45 mL) chopped cilantro
1 tbsp (15 mL) fresh lime juice
2 tsp (10 mL) olive oil
1/4 tsp (1 mL) salt
Mix all ingredients in a bowl and refrigerate in a covered container for at least 30 minutes or up to 3 hours before serving. Serve with grilled or roasted meats or fish, or as an accompaniment to cheese quesadillas or tortilla chips.
Makes 6 servings.
