Ingredients

60 mL (4 tbsp) unsweetened orange juice
60 mL (4 tbsp) honey
30 mL (2 tbsp) rum
4 firm, ripe bananas
2 cinnamon sticks, broken in half

Directions

This delicious dessert of baked bananas is especially good served with a dollop of crème fraîche, light sour cream or yogurt. Bananas are rich in potassium, which is important for maintaining proper blood pressure.

Preheat the oven to 180°C (350°F). Put the orange juice, honey, and rum in a small bowl and mix well. Peel the bananas and slice each one in half lengthwise. Put the banana halves in a shallow ovenproof dish. Add the broken cinnamon sticks.

Pour over the orange juice mixture and turn the bananas over in the mixture. Cover the dish with foil and bake for about 30 minutes, until the bananas are softened.

Remove and discard the cinnamon sticks. Serve the bananas on warmed serving plates with the sauce spooned over. Add a dollop of crème fraîche, light sour cream, or yogurt, or a scoop of homemade yogurt ice.
