Ingredients

1 cup (250 mL) cottage cheese
1 cup (250 mL) shredded mozzarella
1 pkg (300 g) frozen spinach, thawed and chopped
1 tbsp (15 mL) chopped parsley, OR 1 tsp dried (5 mL)
1/2 tsp (2 mL) garlic powder (or to taste)
2 lbs (2 kg) pork leg or loin, thinly sliced
2 egg whites, lightly beaten
2 cups (500 mL) whole wheat breadcrumbs
1 lemon

Directions

Combine cheeses, spinach, parsley, and garlic powder; mix well. Place pieces of pork between sheets of wax paper and pound with meat mallet (or rolling pin) to 1/8 inch (3mm) thickness. Cut into 6 x 4 inch (15 x 10 cm) pieces. Place 1 tbsp (15 mL) of filling at one end of each pork rectangle; roll up, tucking in sides. Secure with toothpick. Dip each in egg white then coat with breadcrumbs. Place in greased 13 x 9 inch (33 x 23 cm) baking dish. Juice lemon and drizzle over top of pork. Bake, uncovered, at 350°F (180°C) for 25 to 30 minutes.

Makes 20 rolls or about 6 servings.
