Sea Bream with Fennel

Ingredients

Marinade:
75 ml (1/3 cup) white wine vinegar
50 ml (1/4 cup) olive oil
1 red onion, sliced thinly
10 ml (2 tsp) fennel seeds
Salt and freshly ground pepper, to taste
Fish:
1 sea bream, 2.2 kg (5 lb), cleaned and scaled
Salt and freshly ground pepper, to taste
4 stalks fresh fennel
Olive oil, to taste
Lime wedges, to taste
125 ml (1/2 cup) olives
Fennel leaves, to taste

Directions

  1. In a shallow bowl, combine the ingredients for the marinade and toss gently. Refrigerate 2 hours.
  2. Preheat the grill.
  3. Rinse the fish and pat dry.
  4. Season the cavity of the fish generously with salt and pepper and place the fennel stalks in it. With a sharp knife, make a few diagonal slashes on both sides of the fish and brush both sides with olive oil.
  5. Place the fish in a grilling basket and close. Grill about 30 minutes or until done, turning occasionally.
  6. Open the basket carefully and transfer the fish to a serving platter.
  7. Serve with the marinade, garnished with lime wedges, olives and fennel leaves.
