1 clove garlic, chopped
Spoonful of honey
Splash of soy sauce
1 orange, with juice and rind chopped
1 pork tenderloin, trimmed of fat and sliced thinly across the grain
2 tablespoons (30 mL) canola oil
1 onion, sliced
1 large potato, thinly sliced, skin on
2 parsnips, peeled and sliced into sticks
2 apples, cored and sliced
Combine garlic, honey, and soy sauce with minced orange rind and juice; set aside.
Season pork with salt and pepper. Heat 1 tablespoon (15 mL) of canola oil in a frying pan until shimmering, then add pork.
Sear until golden on all sides and remove from pan. Add another tablespoon (15 mL) of oil to the pan, then the vegetables and fruit.
Pour in soy mixture and return pork to the pan. Stir-fry until pork is cooked through.
Wine pairing: Beaujolais Villages
A lighter red is perfect.
