Ingredients

1.5 kg (3 lbs) pork chops or spareribs
1 onion, finely chopped
3 garlic cloves, chopped
125 mL (1/2 cup) lemon juice
125 mL (1/2 cup) olive oil
5 mL (1 tsp) dried oregano or mixed herbs
  Salt and black pepper
  Olives, parsley, and lemon wedges, to garnish

Directions

Place the pork in a shallow dish with the onion, garlic, lemon juice, olive oil, oregano, salt, and pepper. Turn to coat, then marinate for at least 3 hours at room temperature or overnight in the refrigerator.

Prepare a charcoal fire or preheat a gas grill. Remove the meat from the marinade and drain. Cook over medium-hot coals for about 8 minutes, preferably covered, until browned on one side, then turn and cook the other side. Serve hot, sprinkled with salt and pepper and garnished with olives, parsley, and lemon wedges.
