375 ml (1 1/2 cups) all-purpose flour
325 ml (1 1/3 cups) light beer
Salt and freshly ground pepper, to taste
500 ml (2 cups) olive oil
12 mini zucchini, halved lengthwise
Sea salt, to taste
- In a bowl, beat the eggs. Add the flour and stir to blend. Add the beer and seasonings.
- In a saucepan, heat the oil to 170ºC / 325ºF.
- Dip the zucchini pieces in the batter and fry 6 pieces at a time until golden.
- Drain on paper towels and keep warm.
- Serve with sea salt.
