Smoked Trout Spread

Serve this smoky spread on small pieces of black bread or crackers, garnished with fresh dill sprigs.

3/4 pound boneless smoked trout
8 ounces cream cheese, softened
1/2 cup sour cream
2 tablespoons fresh lemon juice
1 tablespoon minced shallot or white part of green onion (scallion)
1 tablespoon prepared white horseradish
1 tablespoon chopped fresh dill, or 1 teaspoon dried dill
1/4 teaspoon black pepper
Dill sprigs for garnish (optional)


Remove any skin from trout. Flake trout, discarding any small bones. Place trout in a food processor. Add cream cheese, sour cream, lemon juice, shallot, horseradish, dill, and pepper. Pulse until fairly smooth. Garnish with dill sprigs. (Can be made up to 5 days ahead if covered and refrigerated.)
