Raspberry Sauce

Pour this gorgeous sauce into glass bottles, then cork and, if desired, dip into melted wax to seal.

Ingredients

1 package (12 ounces) frozen dry-pack raspberries, thawed
3/4 cup granulated sugar
1/4 cup fresh orange juice
4 strips orange zest (orange part of peel), each 2-inch x 1/2-inch

Directions

  1. In a food processor or blender, puree raspberries. If you want a smooth sauce, line a strainer with cheesecloth and push through the puree, catching the strained puree in a bowl (you should have 1 cup). Discard solids and seeds.
  2. In a small saucepan, bring sugar, orange juice, and zest just to a boil over moderate heat. Strain into the raspberry puree, and stir to combine. Refrigerate sauce in a covered container up to 2 weeks.
