500 ml / 2 cups / 6 peaches, peeled, pitted and cut in pieces
300 ml / 1 1/4 cups sugar
2 egg yolks
10 ml / 2 tsp finely grated orange zest
375 ml / 11/2 cups 35% cream, whipped
To taste blueberries
In a blender, purée the peaches with 50 ml / 1/4 cup of the sugar. Set aside.
In a large bowl set over (not in) a pot of simmering water, whisk the eggs, egg yolks, orange zest and remaining sugar for five minutes, until thick and foamy. Remove to the counter and continue whisking until cooled.
Add the peach purée and fold in the whipped cream.
Pour the mixture into a 23 cm x 10 cm x 6 cm / 9” x 4” x 2.5” loaf pan lined with plastic wrap. Cover and freezer for 6 hours.
At serving time, remove the plastic wrap, slice and garnish each serving with blueberries.
