4 eggs
50 ml (1/4 cup) sugar
250 ml (1 cup) 35% cream
375 ml (1 1/2 cups) milk
5 ml (1 tsp) grated orange zest
5 ml (1 tsp) vanilla extract
2 L (8 cups) stale pannetone, in 2.5 cm (1 in) cubes
50 ml (1/4 cup) brown sugar

Directions

  1. Preheat oven to 180°C / 350°F.
  2. In a large bowl, combine the first 6 ingredients and then gently stir in the pannetone.
  3. Pour the mixture into a buttered 22 cm (9 in) square baking dish and sprinkle with the brown sugar.
  4. Cook in a bain marie* in the middle of the oven for about 1 hour, or until the pudding is slightly puffed and golden brown.
  5. Serve warm.

*To make the bain marie, place the dish with the pudding in a larger baking dish half-filled with boiling water.
