1-3/4 cups (425 mL) all-purpose flour
1/4 tsp (1 mL) salt
6 egg whites
1-1/2 cups (375 mL) sugar (divided)
6 egg yolks
2/3 cup (150 mL) orange juice (divided)
1 tbsp (15 mL) grated orange peel
1-1/2 cups (375 mL) regular or low fat orange or lemon yogurt
In medium bowl, stir together flour and salt. Set aside. In large bowl, with electric mixer, beat egg whites until foamy. Gradually beat in 1/2 cup (125 mL) sugar, 2 tbsp (30 mL) at a time, beating well after each addition. Continue beating until stiff peaks form. In large bowl, with electric mixer, beat egg yolks until thick and lemon-coloured (about 3 minutes). Gradually beat in remaining 1 cup (250 mL) sugar. Continue beating until mixture is smooth. Stir flour mixture and 1/3 cup (75 mL) orange juice, alternately, into egg yolk mixture, beginning and ending with flour. Stir in orange peel. Fold yolk mixture gently into whites. Pour batter into an ungreased 10 x 4-1/2-inch (25 x 11 cm) nonstick tube pan.
Bake in preheated 350°F (180°C) oven for 35 to 40 minutes, until cake springs back when pressed with finger. Invert to cool. Remove from pan and place on serving plate. Sprinkle with icing sugar. In small bowl, stir together yogurt and remaining 1/3 cup (75 mL) orange juice. Serve sauce with cake.
