500 ml (2 cups / 225 g) mozzarella cheese, grated
1 egg, beaten
15 ml (1 tbsp) fresh basil, chopped
60 g (2 oz) salami, diced
Freshly ground pepper, to taste
150 ml (2/3 cup) plain bread crumbs
45 ml (3 tbsp) olive oil
12 slices Italian plum tomatoes
- In a bowl, combine the mozzarella, egg, basil and salami. Season to taste.
- Shape mixture into 12 walnut-sized balls and flatten slightly. Press into bread crumbs to coat.
- Refrigerate one hour.
- In a non-stick pan, heat the oil and brown the balls 2 minutes on each side, or until crisp and golden.
- Serve hot on a slice of tomato.
Variation: Use mild Provolone instead of Mozzarella.
