125 ml (1/2 cup) vegetable oil
2 sprigs fresh rosemary
1 dried hot pepper
5 ml (1 tsp) mixed peppercorns
4 garlic cloves, green germ removed
8 sprigs fresh thyme
5 ml (1 tsp) fennel seeds
3 strips lemon zest
250 ml (1 cup) mixed green and black olives
- In a frying pan, stir together all the ingredients except the olives.
- Cook over very low heat for 5 minutes, or until garlic is beginning to brown. Add the olives. Mix well and cook another 2 minutes.
- Remove from heat and spoon mixture into sterilized jars. Cover and allow to cool completely. Store in refrigerator.
Note: You’ll find mixed peppercorns – black, white, green and pink – in the spice section of most grocery stores. Use them as a flavourful alternative in any recipe calling for ground pepper.
