Ingredients

4    egg yolks
3    eggs
180 ml / 3/4 cup    sugar
1    lemon, zest finely grated
125 ml / 1/2 cup    freshly squeezed lemon juice
50 ml / 1/4 cup    35% cream
30 ml / 2 tbsp    powdered sugar
4     individual puff pastries

Directions

In a bowl, combine the egg yolks, eggs, sugar, lemon zest and juice. Place the mixture over (not in) barely simmering water, and cook, stirring constantly until thickened. Strain, cover with plastic wrap and refrigerate for two hours.

In a bowl, whip the cream with the sugar.

Fill the pastries with the lemon mixture, top with whipped cream and serve.
