Granola with Toasted Walnuts and Cranberries

3 cups (750 mL) old-fashioned or quick-cooking oats
1/2 cup (125 mL) coarsely chopped walnuts
2 tbsp (30 mL) wheat germ
2 tbsp (30 mL) sesame seeds
1/4 tsp (1 mL) salt
1/3 cup (75 mL) honey
1 tbsp (15 mL) light brown sugar
1 tbsp (15 mL) extra-light olive oil
1 tsp (5 mL) vanilla
1 cup (250 mL) dried cranberries

Directions

Preheat oven to 300°F (150°C). Combine oats, walnuts, wheat germ, sesame seeds, and salt in 13 x 9-inch (32.5 x 22.5 cm) baking pan. Bake until oats and nuts are toasted and fragrant, about 30 minutes. Remove pan from oven.

Increase oven temperature to 350°F (180°C). Meanwhile, combine honey, brown sugar, and oil in small skillet over medium heat. Cook until sugar has melted, about 1 minute. Remove from heat and stir in vanilla.

Drizzle honey mixture over oat mixture and stir to coat. Return to oven and bake, stirring occasionally, until oats are crispy, about 10 minutes. With a spoon, break up any clumps. Stir in cranberries. Store in airtight container.

Makes 5 cups.
