Eggs Florentine in a Mug

Instructions
  1. Coat 8-oz. coffee cup with coconut oil. Add eggs, water, and spinach; beat until blended.
  2. Add salt and pepper to taste.
  3. Microwave on high for 30 seconds; stir.
  4. Microwave until egg is almost set, 45 seconds longer.
  5. Top with cheese and tomatoes.
