Ingredients

1 cup (250 mL) old-fashioned rolled oats
1/2 cup (125 mL) walnuts
1 cup (250 mL) corn flakes
1/2 cup (125 mL) sugar
2 large egg whites
2 tbsp (30 mL) fresh lime juice
1 tsp (5 mL) grated lime zest, plus extra for garnish
1/2 cup (125 mL) prune butter
1 lb (500 g) fresh plums, halved, pitted, and sliced into thin wedges

Directions

Preheat oven to 350ºF (180ºC). Combine oats and walnuts in baking pan and bake until oats are toasted, about 7 minutes. Transfer oats and walnuts to food processor along with corn flakes and sugar and process to fine crumbs. Add egg whites and 1 tbsp (15 mL) of lime juice and pulse until evenly moistened. Line large baking sheet with parchment paper. Divide dough into 6 pieces. With moistened hands, pat each piece out to a 4-inch (10 cm) round. Use tips of fingers to give each round a raised edge. Bake until crisp, about 10 minutes. Cool 2 minutes on baking sheet, then transfer to wire rack to cool completely. Combine remaining 1 tbsp (15 mL) lime juice, lime zest, and prune butter in small bowl. Spread mixture over bottom of each cooled round. Arrange plums over prune butter mixture. Garnish with lime zest, if desired. Cook’s Clue: These crisp tartlets are meant to be picked up like a big cookie, but if you make them ahead and let them sit overnight, they soften enough to be eaten with a knife and fork. Makes 6 servings.
