Special diet :
300 ml / 1 1/4 cups all-purpose flour
180 ml / 3/4 cup corn meal
15 ml / 1 tbsp baking powder
30 ml / 2 tbsp sugar
To taste salt
300 ml / 1 1/4 cups milk
90 ml / 6 tbsp unsalted butter, melted
1 piece, 250 g Mozzarella di Bufala cheese, diced
125 ml / 1/2 cup / 60g grated Parmesan cheese
12 leaves oregano
Preheat oven to 200°C / 400°F. Butter 12 muffin tins.
In a bowl, combine the dry ingredients. Set aside.
In another bowl, lightly beat the milk, egg and melted butter. Set aside.
Add the Mozzarella to the dry ingredients, combine delicately.
Pour the liquid ingredients over the dry ones and combine with a rubber spatula just until moistened. Do not overmix.
Full the muffin tins ¾ full with the batter.
Sprinkle with Parmesan and garnish with an oregano leaf.
Bake for about 20 minutes. Remove from oven and wait 5 minutes before removing from the tins. Serve immediately.
