1 lb (500 g) skinless, boneless turkey breast
3/4 cup (175 mL) cooked brown or basmati rice
1/4 cup (60 mL) prune butter
1 tbsp (15 mL) Dijon mustard
3/4 tsp (3 mL) salt
1/2 tsp (2 mL) rubbed sage
1/2 tsp (2 mL) dried rosemary, minced
- Cut turkey breast into large chunks. Place in food processor and pulse until coarsely ground.
- Transfer ground turkey to medium bowl. Add rice, prune butter, mustard, salt, sage, and rosemary, and stir to just combine.
- Shape mixture into twelve 2-in (5 cm) patties. Spray a broiler pan with nonstick cooking spray. Preheat broiler.
- Place patties on pan and broil 4 inches (10 cm) from heat, turning once, until cooked through, about 3 minutes per side.
