Ingredients

425 mL (1 ¾ cups) all-purpose flour
75 mL (1/3 cup) cornmeal
30 mL (2 tbsp) sugar
10 mL (2 tsp) baking powder
½ mL (1/8 tsp) salt
2 large egg whites
1 large tart cooking apple, finely chopped
250 mL (1 cup) low fat (1% milk fat) milk
125 mL (½ cup) shredded reduced-fat cheddar cheese (2 oz)
Vegetable oil
75 mL (1/3 cup) sugar
3 mL (½ tsp) ground nutmeg

Directions

  1. In a large bowl, stir together the flour, cornmeal, 30 mL (2 tbsp) sugar, baking powder and salt. In a medium-sized bowl, combine egg whites, apple, milk and cheese. Add to flour mixture all at once and stir just until combined.
  2. In a deep 30 cm (12-inch) skillet, heat 2.5 cm (1 inch) of oil over moderately high heat to 190ûC (375ûF) or until a 2.5 cm (1-inch) cube of bread browns in 30 seconds. Carefully drop batter by heaping tablespoons, several at a time, into hot oil. Cook for 3 to 4 minutes or until golden, turning once.
  3. Using slotted spoon, remove and drain on paper towels. In a paper bag or plastic bag, combine the 75 mL (1/3 cup) sugar and nutmeg. Add the hot fritters, several at a time, and shake to coat. Serve warm.
