Apple and Cinnamon Phyllo Tartlets

6 phyllo pastry sheets, each measuring at least 9 ½ inches
1 oz (25 g) unsalted butter, melted
2 dessert apples, halved, cored and thinly sliced
2 tbsp (30 mL) of caster sugar
½ tsp (7 mL) ground cinnamon
4 tbsp (60 mL) of Greek yogurt (optional)

Directions

  1. Heat the oven to 400°F (200°C). Lay a sheet of phyllo pastry on the work surface, brush it with a little of the melted butter, then lay another sheet on top. Continue brushing with butter and layering until all six phyllo sheets are stacked on top of each other.
  2. Using a 4 ½-inch (12 cm) saucer as a guide, cut out four pastry rounds with a sharp knife. Brush each pastry round with the remaining butter and place them on a baking sheet. Arrange the apple slices on the pastry rounds, fanning them out from the centre.
  3. Dust with sugar and cinnamon, then bake for 20 minutes or until the pastry is golden and the apples are tender. Serve the tartlets warm with 1 tbsp (15 mL) of Greek yogurt on each, if you like.
