Turkey Swiss-Cheese Roll-Ups in Tomato Sauce

Ingredients

1 large turkey breast, sliced and cut into 4 cutlets
2 tsp (10 mL) Dijon mustard, divided
4 slices of ham
4 slices Swiss cheese
1 cup (250 mL) chopped fresh parsley
2 tbsp (30 mL) olive oil
1 can (28 oz/400 mL) stewed tomatoes
2 cloves garlic, minced
1/2 cup (50 mL) chopped fresh basil OR 1/2 tsp (2 mL) dried
1 tsp (5 mL) black pepper
1/2 tsp (2 mL) salt

Directions

Enjoy this with a spinach salad and a bowl of soup.

Lay the turkey cutlets out and spread each with 1/2 tbsp (2 mL) of the Dijon mustard. Top each with one piece of ham and one slice of Swiss cheese. Sprinkle parsley evenly over the turkey breasts. Roll up tightly and secure with toothpicks. Heat the olive oil in a large sauté pan or frying pan, and brown the turkey roll-ups on all sides, about 4 minutes altogether. Add the tomatoes, garlic, basil, pepper, and salt. Allow to simmer for 15 minutes, or until turkey is done and sauce is reduced. Serve roll-ups and tomato sauce with rice or pasta.
