Ingredients

1 tbsp (5 mL) vegetable oil
1 lb (500g) skinless, boneless turkey breast (cut in 1/2 inch/1 cm strips)
1-1/2 cups (375 mL) chicken stock
2 tbsp (25 mL) soy sauce
1/4 tsp (1 mL) ground ginger
1 clove garlic, minced
3 cups (750 mL) frozen mixed vegetables
4 oz (about 1-1/2 cups/375 mL) uncooked spaghettini pasta or vermicelli, broken up
2 tsp (10 mL) cornstarch
2 tbsp (25 mL) water

Directions

In a large skillet or wok, heat oil over high heat. Add turkey; stir-fry 2 to 3 minutes or until no longer pink. Stir in stock, soy sauce, ginger, garlic and frozen vegetables. Bring to a boil, reduce heat, add noodles and cover. Simmer 5 to 8 minutes or until noodles are tender. In a small bowl, combine cornstarch and water; mix well. Stir into hot mixture in skillet. Cook 1 minute or until thickened, stirring constantly.

Microwave Instructions
Omit oil. Place turkey in a 9 x 13 inch (3L) microwave-safe dish. Cover. Microwave at HIGH for 4 to 6-1/2 minutes or until no longer pink inside, stirring twice during cooking. Stir in stock, soy sauce, ginger, garlic and frozen vegetables. Cover and microwave at HIGH for 6 to 7 minutes or until mixture comes to a boil, stirring once halfway through cooking.

Add pasta noodles; mix well. Cover and microwave at HIGH 6 to 7 minutes or until pasta is tender. In a small bowl, combine cornstarch and water; blend until smooth. Stir into hot mixture in casserole. Microwave at HIGH for 1 to 2 minutes or until thickened, stirring once during cooking.

Makes 4 servings.
