2/3 cup (150 mL) granulated sugar
¼ tsp (1 mL) salt
¼ tsp (1 mL) ground nutmeg
¼ tsp (1 mL) ground cinnamon
2 tsp (10 mL) vanilla extract
3 cups (750 mL) whole or 2% milk
1. In bowl, whisk eggs, sugar, salt, nutmeg, cinnamon and vanilla. Whisk in milk. Pour through fine sieve or cheesecloth-lined strainer into eight greased ramekins or 6-oz (175-mL) heatproof baking dishes.
2. Place dishes in roasting pan on rack in 300°F (150°C) oven; carefully pour in enough hot water around custards to come halfway up sides of dishes. Bake for 45 to 55 minutes or until tops are firm and a knife inserted in centre comes out clean.
3. Remove ramekins from water; let cool on rack. Refrigerate until chilled, about 2 hours. Serve in dishes.
