3 lbs (1 1/3 kg) peeled fresh or canned Italian plum tomatoes, drained and chopped
1/4 cup (50 mL) olive oil
1 tsp (5 mL) salt
1/4 to 1/2 tsp (1-2 mL) black pepper
1/8 to 1/4 tsp (1/2 – 1 mL) red pepper flakes
1 1/2 lbs (670 g) spaghetti, cooked and drained 2/3 cup (175 mL) chopped fresh basil or Italian parsley
In a large saucepan over moderate heat, bring tomatoes, oil, salt, and black pepper to a boil. Reduce the heat to low and simmer, uncovered, for 25 minutes.
Working in batches, purée sauce in a blender at high speed or in a food processor until smooth, scraping down container sides as needed. Return to the pan, add red pepper flakes and simmer, uncovered, over moderately high heat, for 15 minutes; stir often.
Ladle over hot spaghetti, sprinkle with chopped basil, and serve.
