45 mL (3 tbsp) olive oil
30 mL (2 tbsp) dry sherry or apple cider
30 mL (2 tbsp) minced fresh sage or 7 mL (1 1/2 tsp) ground sage
0.5 mL (1/8 tsp) black pepper
4 centre-cut pork chops, about 1/2 in thick (125 g/4 oz each)
In a self-sealing plastic food storage bag, combine the oil, sherry, sage, and pepper. Add the pork chops, push out all the air, and seal tightly. Refrigerate for 30 minutes or up to 2 hours.
Heat a 30 cm (12 in) nonstick skillet over moderate heat. Add the chops and cook for 3 minutes on each side or until no longer pink on the inside. Serve with white beans and tomatoes.
Makes 4 servings.
