4 cups (1 L) peeled and thinly sliced shallots
2 cups (500 mL) tawny or ruby red port wine
2 cups (500 mL) dry red wine
1 cup (250 mL) red wine vinegar
1/3 cup (75 ml) mayonnaise
- In a large saucepan over medium-high heat, bring shallots, port, red wine, red wine vinegar to a boil; reduce heat and simmer until there is barely any liquid left, 10 to 20 minutes.
- Mix 3 tbsp (45 mL) of reduction with mayonnaise.
