Pasta Twists with Fresh Tomatoes, Basil and Garlic

Ingredients

4 medium-size ripe tomatoes, diced
125 mL (1/2 cup) minced basil
2 cloves garlic, minced
30 mL (2 tbsp) lemon juice
125 mL (1/2 cup) olive oil
3 mL (3/4 tsp) salt, or to taste
1 mL (1/4 tsp) black pepper
500 g (1 lb) pasta twists or linguine

Directions

In a medium-size bowl, mix all of the ingredients except the pasta. Cover and let sit at room temperature for at least 2 and up to 6 hours.

Cook the pasta according to package directions until al dente. Drain, toss with the sauce, and serve immediately. Serve as a first course, or present it as the main course, followed by cheese and a green salad.

Makes 4 servings as an entrée, 6 as a first course.
