Ingredients
French bread, toasted (Baguette/small)
2 small tomatoes, chopped
2 cloves garlic, minced
1/2 cup (125 mL) fresh basil, chopped
1 tsp (5 mL) lemon juice
1 tbsp (15 mL) oil
1 tsp (5 mL) balsamic vinegar
1 tsp (5 mL) black pepper
1/4 cup (50 mL) Parmesan cheese
Directions
While this is typically served as an appetizer, I often serve it as a side dish with a bowl of soup.
Slice the bread lengthwise and toast under the broiler or in a toaster oven. Chop the tomatoes, garlic, and basil; add the lemon juice, oil, balsamic vinegar and pepper. Mix together. Spread over the toasted bread and sprinkle with Parmesan cheese. Place under the broiler for 2-3 minutes or until golden.

Go wild! Serve this as a main dish for lunch by adding 1 cup cubed, cooked chicken, or 1/2 cup (125 mL) crab meat.
