1-1/2 cups (375 mL) ricotta or cottage cheese
1 egg, beaten
1/4 cup (50 mL) grated Parmesan cheese
1 tbsp (15 mL) chopped fresh parsley
1/4 tsp (1 mL) salt
Pepper, to taste
1 cup (250 mL) spaghetti sauce
3/4 cup (175 mL) grated mozzarella cheese
Combine ricotta, egg, Parmesan, parsley, salt, and pepper. Place about 2 tbsp (30 mL) mixture in centre of each crêpe; roll up. Place crêpes, seam side down, in 13 x 9-inch (33 x 23 cm) baking dish. Spread spaghetti sauce over crêpes and top with mozzarella cheese. Bake in preheated 350ºF (180ºC) oven for 25 to 30 minutes.
Makes 12 Crêpes.
