1 package Butterball Bacon Style Turkey (heated and chopped)
180 g (6 oz) uncooked angel hair pasta, broken
10 mL (2 tsp) olive oil
1 small onion, sliced
1 red bell pepper, cut in strips
450 mL (16 oz) *Egg Beaters egg substitute
150 g (5 oz) fat free ricotta cheese
120 g (4 oz) fat free mozzarella cheese, shredded
120 g (4 oz) reduced fat Swiss cheese, shredded
2 mL (1/2 tsp) salt
2 mL (1/2 tsp) black pepper
1 pkg (285 g/10 oz) frozen spinach, thawed and squeezed dry

Directions

*Option — Substitute 8 large eggs

Chop and heat Butterball Bacon Style Turkey. Cook and drain pasta. Heat oil in large skillet over medium heat until hot. Cook and stir onion and bell pepper until tender. Combine egg substitute, cheeses, salt, pepper and cooked pasta in large bowl. Add vegetables, spinach and Butterball Bacon Style Turkey.

Spray 10-inch quiche dish with nonstick cooking spray; pour mixture into dish. Bake in preheated 350°F (180°C) oven for 30 minutes.

Cut into wedges and serve with spicy salsa, if desired.

Makes 8 servings.
