4 boneless chicken breasts
1/2 cup (125 mL) apple juice
2 apples, cored and quartered
1/4 cup (50 mL) chopped fresh parsley
2 tbsp (30 mL) balsamic vinegar
2 tbsp (30 mL) olive oil
2 tbsp (30 mL) Dijon mustard
1 tbsp (15 mL) wine vinegar
1/2 tsp (2 mL) sea salt
1/2 tsp (2 mL) black pepper
2 heads romaine lettuce
1 small red onion, cut into thin slices
1/2 cup (125 mL) shaved carrot
1/2 cup (125 mL) crumbled Stilton cheese
8 cherry tomatoes
Try cooking this treat on the indoor or outdoor grill.
Grill chicken breasts, basting with 1/4 cup (50 mL) of the apple juice, and turning once, for 15 minutes or until the chicken is cooked through and has grill marks. Remove, allow to cool, and slice. Grill the apple for 5 minutes. In a bowl, make the dressing by combining the remaining 1/4 cup (50 mL) of apple juice, parsley, balsamic vinegar, olive oil, Dijon mustard, wine vinegar, salt and pepper. On four plates, place some lettuce, red onion, shaved carrots and Stilton cheese. Put the chicken breasts on top of each salad and divide salad dressing between the four plates. Place 2 cherry tomatoes on the side of each salad.
Makes 4 servings.
