Golden Shallot Mayo

Use this mayo to compliment the Qualicum Bay Scallop Burger recipe.

2 cups (500 mL) light miso paste
4 cups (1 L) mayonnaise
2 tbsp (25 ml) mirin
Sea salt and freshly ground black pepper, to taste
1 cup (250 mL) crispy fried sliced shallots


  1. In a large bowl, whisk miso paste, 1 cup (250 mL) of the mayonnaise, and the mirin, until smooth.
  2. Whisk in remaining mayonnaise; add salt and pepper.
  3. Stir in shallots.
